Sweet Omelette

WTo kick off my recipe posts, I thought of post one of my go to low syn favourites - sweet omelette! 

It's low syn, fantastic for Extra Easy SP, and (the reason why I love it) allows you to have a sweet treat for breakfast while keeping your healthy extra B choice for later in the day. Ok, it isn't going to win any beauty contests, but, after years of not looking my best either, I'm willing to look beyond the first impression ;)

To make one sweet omelette, you'll need:
- 2 large eggs
- 3 tbsp sweetener (or more/less depending on how sweet you like things...I've got a sweet tooth!)
- 50ml Milk (part heathy extra A choice if you're keeping this low syn) 
- 1 tsp cinnamon (optional)
- Any syn free flavourings you like (I used custard, but you could add anything - vanilla and almond are also personal favourites) 
- 35g raspberries (about 5 small berries)

Total syns: just 0.5 for the cooked raspberries! 

Method: 

- Whisk together the eggs, milk, sweetener, cinnamon and flavourings, until you have a smooth mixture that looks something like this (I told you it's not pretty!):


- Next, grab a non-stick pan, spray it with fry-light and pre heat on a gentle setting on your hob. At the same time, also pop your grill on to heat up, again, on a low heat setting.

- Pour your mixture into your pan, and add the raspberries into the mixture - it should now look something like this:


- Cook on the hob for 1-2 mins, using a spatula to check when the bottom is cooked - when it is, transfer it to the grill to cook the top for another 1-2 mins. 

And it's done! Your finished result will hopefully look a little like this! 


Now the final choice is to figure out how to serve it! I like to add lots of fruit and a yoghurt if I'm following extra easy, or 0.5 syns of Choc Shot if I'm doing an extra easy SP day. 

So there you have it! The perfect sweet breakfast as far as I'm concered - it's a little eggy, but the bursts of cooked sweet raspberries in it make it for me, and, if you're looking to save your B choice for later in the day, its a winner!
